Understanding Ammonia is great. As the primary waste product of fish and a common source of illness if it’s allowed to accumulate, you should understand it. BUT IT IS MORE IMPORTANT to know what to do about it. And that’s reduce feeding, do a partial water change, make sure the pH is close to neutral with a regulator and improve the biofiltration. Do SOMETHING to get some bioseeding happening. These concepts are amply discussed in the book Saving Sick Fish, and in this website.
